Current Available Positions 

Line Cook

The ideal Line Cook candidate will have a minimum of five years of progressive culinary experience working in a high volume private club, resort or hotel. The preferred candidate ideally will have an Associate Arts degree from a credited Culinary Institution or a Bachelors Degree in hospitality or hotel management.

The Line Cook reports directly to the Executive Chef and follows the direction of the Executive Chef at all times. The line cook must be available to work a variety of shifts and be flexible with the needs of the club and its members.

~Knife handling skills to chop, slice, cut, fabricate, trim and dice required food items in the manner determined as the standard of operations.

~Math menu conversions as directed in batch cooking methods and standard food preparation techniques.

~Prepare soups, sauces, vegetables, starches, meat, fish and other products as required by the standards set forth by the executive chef.

~Lead and manage kitchen staff in a productive, consistent manner in compliance with all state, local and federal requirements.

~Interact professionally with all club team members on a consistent basis.

~Motivate kitchen staff members in conjunction with the executive chef’s standards of operation.

~Foster an environment that recognizes over achievement and rewards positive contributions to the overall well-being and success of the club.

~Train staff members in all areas of kitchen production, sanitation and cost controls.

~Work all food stations in the kitchen to include but not limited to the following areas: Pantry, Broiler, Sautee Station, Expeditor, Meat Cutter, Sauce Productions, etc...

Primary Duties:

  • Daily soup prep
  • Prep lists and recipe adherence
  • Prepares Employee Meals
  • Check in food deliveries and stocks inventory
  • Daily line checks and tastings
  • Ala carte lunch and dinner prep
  • Follows proper closing procedures, ensuring all goods are locked up and secure
  • Works with executive chef on Daily Specials
  • Daily prep of items, dressings, coleslaw, etc.
  • Butchering proteins (fish, meat, etc.)
  • Oversee cleanliness and sanitation of kitchen, storage, and coolers
  • Work closely with Executive Chef to ensure all food & beverage needs are met
  • Oversee daily execution of all assigned kitchens´ food production and service execution. Responsibility for meeting daily deadlines of opening, creating, and posting table-talks for specials and producing sample dishes for pre-shifts in a timely manner.
  • Maintaining food cost at budgetary guidelines- understanding of food costing formulas and yield percentages.
  • Weekly deep cleaning projects

Licenses and Special Requirements

The current certification compliance for Food Service Sanitation from the State of Florida.

Physical Requirement and Work Environment

The ability to lift and carry up to and including fifty pounds.

The ability to receive products both food and other supplies from approved vendors.

 

Golf Assistant-Seasonal (October 15-25, 2018 through April 28, 2019)

Assist the professional staff with all facets of the golf operation including tournament operations, tee time management, men’s and ladies days, clinics and individual lessons, all while providing the highest level of service to our members and their guests. 

The successful candidate must be a team player that is organized, creative, detail oriented and energetic with excellent communication and time management skills and a strong work ethic.

 Job Knowledge & Skills

  • PGA/LPGA Member or Level 1 Apprentice in good standing.
  • Strong organizational, planning and prioritization skills.
  • Self-motivated with a service focused attitude.
  • Assist with all tournament operations and all men’s and ladies’ weekly events and programs including the creation and coordination of promotional items, registration forms, scorecards, rules sheets, scoreboards, scoring, results sheets, score and credit book posting, post-tournament billing and year-end awards.
  • Assist in coordinating golf activities with other departments as appropriate.
  • Assist Golf Operations Manager with merchandising and inventory control.
  • Assist with the daily opening and closing of Golf Operations.
  • Assist Head Assistant Professional with instruction programs and clinics and provide individual lessons as time permits.
  • Promote club events and activities and encourage member participation.
  • Must be proficient in GHIN, Golf Genius Tournament Software, POS/Tee Time system (Jonas), and Microsoft Word, Excel, Outlook and Publisher.
  • Knowledgeable on the Rules of Golf.
  • Maintain playing ability and work to stay competent in all areas of the game.
  • Play Golf regularly with a cross-section of members as time permits.
  • Perform other appropriate tasks as needed to ensure the highest quality golf experience.
  • This position is scheduled for 35-40 hours/week, 5 days/week
  • (6 days/week during major tournament weeks)

Food Runner

The Food Runners support both the kitchen and dining room and act as the liaison to expedite food services expediting hot and cold food. Food Runners must manager time efficiently, understanding priorities in supporting the service teams. 

The Food Runner handles a wide variety of tasks including but not limited to:

  • Clean and set up tables for dining service and events
  • Setting up projection systems
  • Working Audio Video equipment for events
  • Setting up for special events

Busser

The Bussing Team supports the Dining Rooms & Cabana to clean and replenish food services according to the needs of the Club's events.

Previous Bussing experience in a Country Club environment preferred.

PT Bartender: Willoughby an active Golf and Tennis Country Club community is seeking a Part-Time bartender with highly interactive personal skills to serve a distinguished audience and private clients. The ideal candidate will have a minimum of five years of high volume bartending experience in a private club setting. The environment is open on all weekends, holidays, late nights and special events. Server

Responsible for serving guests, members and families a wide variety of beverages and food to the highest standard level communicated in the food and beverage training manual. Assure a high standard of appearance at all times. 

Knowledge, skills and abilities: Prior Club Experience preferred but not necessary. Prior experience in fine dining, casual and banquets required.

Attends to members in private club by performing duties, such as the following: Takes orders for food and beverages and serves members in dining room, clubrooms or cabana.

• Serves beverages to patrons seated at tables in bar or cocktail lounge. 
• Take orders for and serve light meals and hors d'oeuvres. 
• Request identification from customers when legal age is questioned. 
• Request member’s name and/or member number for billing.

Serves meals to patrons according to established rules of etiquette, working in formal setting: Presents menu to diner, suggesting dinner courses, appropriate wines, and answering questions regarding food preparation.

Previous Country Club Serving experience preferred.
